Bittersweet Bistro
787 Rio Del Mar Boulevard, Aptos
“In the long run we’re hoping to save a lot,” Vinolus said. The biggest savings come from the industrial water sprayer in the kitchen, Fleming said. The new low-flow spray heads will save around $3,000 a year, Vinolus estimated. The new efficient lighting will prevent 1,400 pounds of greenhouse gases from reaching the atmosphere. Of all things, Vinolus, who has run Bittersweet for 10 years, seemed most exited about the food waste recycling that allows food scraps to decompose into a nutrient-rich fertilizer. “The compost turns back into food. It completes the cycle,” he said. [as quoted in the Register Pajaronian Newspaper, 4/23/05]
